You might be new to sugar-free chocolates and not know what to look for beyond the packaging label. The following buying guide should help explain the difference between sugar-free and regular chocolate for a healthier snack choice.
Chocolate can still be sweet without sugar. Manufacturers often use the substitute maltitol, a sugar alcohol that comes very close to the same sweetness as sugar. It's a great sugar substitute for those with dietary restrictions because the body absorbs it at a much slower pace. That means it won't cause a blood sugar spike.
Other alternative sweeteners include allulose, a lower-calorie substitute to sugar, isomalt from beets, or Stevia. Chocolate can also contain naturally sweet ingredients such as monk fruit or organic coconut sugar to give it flavor. With these alternatives, you can still satisfy your sweet-tooth cravings without the unwanted sugar content.
Keep in mind that these alternative sweeteners might not taste like regular sugar. For example, Stevia has a slightly bitter aftertaste. Monk fruit can add a fruity flavor to the chocolate. Furthermore, overconsumption of maltitol can result in an upset stomach (more on this later), so it's advised you eat it in moderation.
After looking at the ingredients list or the packaging label, you can get an idea of the chocolate's general taste, whether sweet, semi-sweet, bittersweet, bitter, milky, or white. Taste notes also come into play in chocolate; nutty, floral, citrus, creamy, and bitter (tannin). Nuts can mellow out the intense sweetness of milk chocolate, for example, and creamy caramel can balance out the bitterness of dark chocolate.
Additionally, consider the consistency of the chocolate. You might be a fan of soft and smooth chocolate or prefer something harder with a little extra crunch. Milk chocolate and creamy additives like caramel tend to be on the smoother side, while bitter and nutty chocolates tend to fall in the dark chocolate range.

This refers to the sugar alcohol. Sugar alcohols can't be fully digested by the human body, and this can cause excess gas or diarrhea unless consumed in moderation. Experts recommend eating only up to 10 to 15 grams of sugar alcohol per day.
And don't forget about calories and fats if your diet is restricted. Although sugar-free chocolates have lower calories than their counterparts, the difference is not a lot – usually about 30 calories less per serving. Furthermore, cocoa butter is heavy in saturated fat, so you can either look for less of this ingredient or stick to the recommended serving.
