You can use the smaller pan to roast vegetables and small pieces of meat, whereas the large roasting pan can roast a whole turkey or big pieces of meat. If you're buying a rectangular pan, go for one with rounded corners. Browned foods that accumulate in the corners can be easily swirled and mixed around if the corners are rounded.
