Our editors searched Japanese e-commerce sites like Amazon, Rakuten, and Yahoo! Shopping for the 19 most popular cutting boards. Then we put them to the test!


We examined each cutting board for the following two criteria

Kyocera's Color Cutting Board is a sheet-type with a rubber feel to it and it stays in place on your countertop without slipping


With a thickness of only 0.1 inches, it is surprisingly soft on the blade and has a comfortable feel compared to other sheet-type cutting boards we tested. It ranked quite low in resilience to cuts, however. 


When we observed the surface after use, it was riddled with scratches and cut marks. The bright color helps in making them not stand out but make sure to take frequent care of this cutting board should you choose to buy it. 

Products That Didn't Make the Cut

Inomata Chemical's Sheet-Type Cutting Board has a softer feel to it than most plastic cutting boards. The knife lands softly on the surface, making for a nice, comfortable cutting experience. Also, it's less likely to slide around when compared to other plastic products


However, cuts and scratches are incredibly obvious. But since they go for around one dollar, you can just buy a new one at your leisure when the one you're using get too damaged.

DAIWA's Cypress Cutting Board and Stand moves around quite a lot when using it but the food seems to stay in place. It's a bit thinner than other wooden cutting boards we tested but is gentle on your knife and comfortable to use


Cuts and scratches aren't too obvious at first but stick out quite a bit when you look closely. Although it comes with a useful stand, the ink from it unfortunately leaves a stain on the board.

Wahei's Yoko Arimoto "La Base" Cutting Board is the thickest of all the cutting boards we tested and proved to be exceptionally stable. Although it's a bit hard on the blade, the board absorbs the shock from the knife giving you a stress-free cutting experience. 


Since the neither the board nor the ingredients moved around all that much, it rated highly in usability. Although, even though deeper cuts weren't obvious, the smaller and shallow ones tended to be


Being a perfect square and also quite on the heavy side, some would most likely want there to be some kind of hole or handle to grab on to when carrying it. 

Products That Didn't Make the Cut

Aeon's TopValu Antibacterial Cutting Board has good elasticity and is decently soft on the blade. However, the board itself won't stick to the countertop well, causing it to move around


The bumpy surface will keep your ingredients from slipping. Although it's rather resilient to cuts and scratches, it's prone to stains. We recommend bleaching it often enough to keep it nice and white.

DAISO's 3-Way Cutting Board is so thin, you can even slightly see your hand if you hold it up to the light. This thinness also makes it feel like it's you're cutting directly on your countertop


Both the ingredients and the board itself slip around a lot, causing a lot of stress when using it. The protruding area on the corner is supposed to help you collect what you've cut but we really didn't see a need for it. Although it proved resilient to cuts and scratches, we weren't at all impressed with this one

Seria's Cutting Board With Attached Grater is well-made and quite durable considering it only costs around a dollar. It comes with an area to grate vegetables but the board itself moves around too much, making it incredibly difficult to use


Even though it's a sheet-type, it doesn't have the flexibility that other sheet-type cutting boards have. And its lack of elasticity will both tire out your arm as well as cause damage to your blade if you use it for too long a time. 

Products That Didn't Make the Cut

MUJI's Rubberized Square Cutting Board is heavy enough to stay in one place but we recommend laying out a wet cloth when cutting harder objects. It's hard on the blade and turned out to be the least resilient to cuts and scratches of any wooden cutting board we tested


We were also a bit concerned about the wood fibers that stand out on the surface. However, its small size could be perfect for cutting things like cheese and serving it straight off the board. 

Products That Didn't Make the Cut

DAISO's Paulownia Cutting Board is thin for a wooden one and rather cheap considering you can tell how warped it is when you place it on your countertop. If wet, it won't slide or move around too much but being as that it's warped, you'll hear bangs and clangs with each and every cut


Although it's soft on your blade, it gets damaged rather quickly. The presence of wooden fibers is also cause for concern.

How We Tested the Products

We purchased the top 19 best-selling Japanese cutting boards from Japanese websites like Amazon and Rakuten and put them to the test!


We tested each product for the following criteria.

First, we tested each product for how easy they were to use. 


What we were mostly looking for were how much the cutting boards slid, how soft they were on the blade of our knife, and how much the ingredients slid on the surface. We used yams in our examination, since they prove to be quite slippery.

Wooden cutting boards tended to be the easiest on our knives and the most comfortable to use compared to other materials. 


We found that wood from the ginkgo tree proved to be the softest and had the most natural elasticity. The wood received the blade easily. It not only proved to be easy on the hands and arms but also on the knife, allowing the blade to last longer than it would with other materials. 


Also, the ginkgo wooden cutting boards dried faster while naturally regenerating from cuts and scratches. This lightweight, easy-to-handle wood is recommended for anyone looking for superior usability

We then tested each product for how susceptible they were to cuts and scratches caused by knives.


We rated each cutting board's appearance and condition after mincing a carrot on it with 3,000 cuts

Natural Straw + Silicon, Synthetic Rubber, and Thermoplastic Polyurethane Came Out on Top

Of all the materials we tested, the ones that came out on top were natural straw with silicon, synthetic rubber and thermoplastic polyurethane. The picture above with the three materials was taken after our 3,000 cuts, and you can see that the cutting boards were left virtually undamaged. 


The straw-and-silicon composite and the synthetic rubber were rather hard on the blade of our knives, but the thermoplastic polyurethane was amazingly soft and comfortable to use, despite how thin it was. 


Thermoplastic polyurethane is made of superior material with anti-friction properties, allowing it to restore the force of the blade, almost sending it back up as you cut through your ingredients with ease.

How to Choose a Cutting Board - Buying Guide

Before deciding on which cutting board is right for you, we would like you to consider the following five points.

Choose between Plastic, Wood or Rubber Based on Your Needs

The most common materials for cutting boards these days are plastic, wood, and rubber. Here, we will introduce the characteristics of each material so you can choose the one that best suits what you're looking for in a cutting board.

Cutting boards made from polyethylene or polypropylene can be cleaned with bleach, making them much easier to get spotless. And since most of them are on the cheap side, even if yours takes a beating or gets stained, you could always replace it easily without breaking the bank


Plastic cutting boards also come in an array of colors and sizes. The sheet-type, in particular, is rather useful since you can easily roll it up in order to pour your ingredients in a pot or pan stress-free. 


On the other hand, plastic cutting boards tend to be harder than ones made from other materials, causing stress on your blade and even chipping it at times. We also recommend buying a plastic board fitted with something that helps to prevent it from sliding around during use. Also, frequent bleaching is recommended to keep it looking brand new.

And since they absorb any shock from cutting, they won't tire out your arm, even after using them for an extended period of time. Also, wooden cutting boards don't slide around as much as others. 


On the other hand, wooden cutting boards are difficult to take care of and clean. You'll need to scrub them down hard and place them in a well ventilated area so that they can dry easily. 


But even if mold starts to grow on it, you can easily sand it down with sandpaper or a wood planer. Although these wooden cutting boards are a bit on the pricey side, you'll be able to enjoy a long, loving relationship as you continue to use it over and over again

Rubber cutting boards are easier on your knife than plastic ones and easier to take care of and clean than wooden ones. We recommend rubber ones for cooks and chefs of any level


It's restorative ability makes it difficult for bacteria to reproduce, even if it's full of cuts and scratches. Water also easily slides off it and it can be washed using bleach, allowing you to keep your cutting board clean and sanitary. 


However, the size and weight of rubber cutting boards may make them difficult to handle. And since they're not strong against high heat, placing extremely hot items on them will either cause them to change color or change shape

Make sure you purchase a cutting board whose size matches that of your countertop and sink, while still getting the biggest one possible. The larger your cutting board is, the harder it will be to dirty up your countertop and kitchen with juicier fruits and vegetables. The larger surface area will also prevent any spillage or dropping of ingredients. 


We recommend choosing a cutting board that can fit easily on your cooking station space as well as in your sink without taking up too much space. If you live in a smaller domicile with no counter space, try purchasing a cutting board that can span the length of your sink to make a space of your own.

A number of plastic and rubber cutting boards are manufactured with antibacterial properties, making it difficult for bacteria to multiply on the surface. 


Cutting boards made from cypress also have a material that has an antibacterial effect, so if you're looking to purchase a wooden one, make sure you check out what it's made of first. 


However, just because a cutting board comes with such properties doesn't mean you can slack off when cleaning them. Wash them after each use and allow them to dry properly.
