Products That Didn't Make the Cut

And why they didn't quite make it.

Daiso Standard Stainless Kitchen Scissors (8) does a great job of anything that isn't meat. It's a pain to wash and maintain, but at a price point of approximately $0.99, it's relatively easy to get a replacement if it rusts.


Kyocera Ceramic Kitchen Shears (9) didn't do a good job of cutting the chicken, which repeatedly slipped out its grasp. It is made of ceramic so it cannot be disassembled, but ceramic tends to be hygienic and doesn't rust.

PLUS Fit Cut Curved Shears (10) also didn't do a good job of cutting the chicken, which kept slipping out. The other ingredients fared only slightly better. They can be disassembled, are safe for dishwashers and dryers, and feature a rust-resistant titanium coating.


Nitori Kitchen Shears (11) feature a stylish look unique to Nitori, but they are lacking in the performance department. While they were able to cut the test chicken, the chicken kept slipping out of the shears. They are detachable and easy to wash, but also tend to come apart during use. Caution required, depending on what you are cutting.

Shimomura Kogyo Excel Kitchen Shears (12) had a difficult time grasping the items being cut. They were also rather difficult to clean as they cannot be disassembled. Comfort-wise, they tend to hurt the fingers of the user depending on the amount of pressure required to cut the ingredient.


Kai Curved Kitchen Scissors (with case) (13) had a handle that was too narrow, and was ill-suited for cutting thick or large ingredients. The odd handle spacing made it difficult to apply power to the handle. Overall, they were bad value for money.


Daiso 3-bladed Kitchen Shears (14) had the worst sharpness out of all the shears reviewed. It could not cut the chicken and crushed the leeks altogether. The blades cannot be disassembled, making maintenance and washing a pain to deal with.

How We Tested Our Products

We were looking for a good balance of sharpness and comfort. Our ideal pair of kitchen shears was something that not only cut all our test ingredients well, but was also easy, safe, and pleasant to use. Bonus points given for any additional functionality other than cutting.


This is how we tested for those factors.

Test ① Sharpness

Our first order of business was testing sharpness.


We prepared four chicken thighs, leeks, nori seaweed, and plastic curry pouches for our three specialists to test with. They used the shears to test how much effort was needed to cut the ingredients, and evaluated the sharpness and precision of the cuts made. The cuts made for each ingredient were then evaluated on a 5-point scale from A+ to D.

It's All about Chicken and Nori! Also, Look out for Curved Blades

Most of the products were able to cut through the nori seaweed and the plastic pouches without much trouble. The chicken thighs however, were useful in showing the differences in performance between the blades. 


We found that in general, curved blades had a more difficult time cutting through the chicken thighs. The curve should have been able to cut through the food easily from the same angle, but ironically, the blade kept slipping away from its position.

Shimomura Kogyo's Verdun Allsten Kitchen Shears can cut through chicken meat like a chef's knife could. It's great for making small cuts, making it useful for kiddie meal recipes.


Smooth blades are a great tool for making round cuts in nori seaweed. It's important to choose a pair of compact kitchen shears that are not only more maneuverable, but also sharp.

Test ② Grip

Our next test was the grip test, in which we tested the shears for grip and comfort. 


We evaluated the shears on the size of the grip handles, and whether their design made our fingers hurt if they were held for extended periods.

Shears Heavier Than 3.5 Ounces Were Actually Easier to Hold

Naturally, we found that comfort was negatively impacted for handles that had weird shapes, moreso if they were not a good fit size-wise for the hand handling them. However, our tests revealed that the weight of the shears themselves also had a significant impact on grip and comfort.


Ironically, we found that shears that weighed more than 3.5 ounces actually didn't feel that heavy at all and were easier to hold and handle. Heavier shears tended to cut the ingredients easily through weight alone. On the other hand, they were harder to handle for our testers who had weak grips

I hold kitchen shears with 4 fingers, so I tend to give a lower score to products that can accommodate only 3 fingers. I think it's easier to carry even the heaviest kitchen shears if you've got 4 fingers working for you.

Test ③ Ease of Maintenance

Lastly, we examined ease of maintenance.


We evaluated this based on whether the shears could be disassembled (for easier cleaning) and whether there were spots where dirt was difficult to remove.

Shears Should Be Easy to Separate if They're Detachable

We found that the ability to disassemble the shears alone was not enough. The shears had to be robust and sturdy enough to not break apart during use. Kitchen shears that easily disassembled simply by opening them up are a potential danger, as they could disassemble while cutting large ingredients and expose the wielder to their blades.


We found that kitchen shears that required a two-step process for disassembly were not only easy to maintain, but safer as well. Products that made a clicking sound or that had some sort of locking mechanism tended to be highly evaluated.

How to Choose Kitchen Shears - Buying Guide

These are the four main criteria to check fr when buying kitchen shears.

Pay Attention to Material, Shape, and Sharpness

Obviously, one of the most important factors to watch out for when choosing kitchen shears is sharpness. Pay attention to the shape of the blade and material to find the best shears for your ingredients and purpose.

Long Blades Make it Easier to Cut Larger Items

Kitchen shears are meant to cut various kinds of food items like meat, fish, vegetables, seaweed, and plastic pouches. Choose kitchen shears that are comfortable and sharp enough for the purpose.


When cutting large items such as meat and crabs, shears with longer blades are your best bet. Tasks that require more refined movements would be better served with smaller kitchen shears.


Shears with serrated blades are best for cutting hard or oily food. The jagged edges help to firmly grasp the ingredients, which allow them to be cut more smoothly. It is best practice to have two types of shears: one exclusively for handling food materials, and another all-purpose pair.

Stainless Blades are Sharper than Ceramic

However, shears that are too easy to disassemble may cause injury. Use your best judgement and choose shears with some sort of locking mechanism. It is also important to check if your shears are dishwasher safe. Some products, particularly those made of plastic, may not play well with dishwashers.
